Sweet Potato, Carrot, and Ginger Soup

This is one of those recipes where you do not need to stick to specific measurements. You could add more or less of any of these ingredients as you like!

What you will need:

  1. Sweet potatoes
  2. Red Onions
  3. Ginger
  4. Carrots
  5. Butter
  6. Oil (can be any oil of your choice)
  7. Chicken stock/Bouillon
  8. Lemon


  1. Sea-salt
  2. Pepper
  3. Cajun
  4. Sage


Coat a pan with butter and oil. When hot, add chopped red onions

While the red onions are sautéing, peel and chop the carrots and sweet potatoes

Then, add the carrots to the pan with the onions and stir. Let cook for about 5 minutes on medium heat

Afterwards, toss the sweet potatoes in as well

Add chopped ginger

Add boiling water (I add enough liquid so that everything in the pan is just about covered) and chicken stock (I use the the KNORR Jelly Bouillon’s, they’re amazing!)

Let simmer until the sweet potatoes and carrots are cooked (fork test!! Poke to see if cooked)

Next, just blend the whole thing!

Bring the blended mixture to a boil one more time and done!

Season as you like (I used seasalt, pepper, cajun, sage, and a splash of lemon juice)
